Double Chocolate Brownies

Hello my lovelies! So, this whole week I was trying to think of new things to bake. For some unknown reason, I couldn’t decide what to bake. I was trying to think of something when I finally found my answer; I was going to make Double Chocolate Brownies! These brownies were amazing, exquisite, marvelous……well you get it. They are delicious and you must try it, I’m serious……you HAVE to try these brownies. They have a rich, chocolate flavor that is not too overpowering, but oh-so-perfect. I adapted this recipe from Recipe Girl, but I tweaked a few things to make these brownies my own, and perfect in every way.

Last weekend, my brother got me these pair of Adidas that I  had wanted for quite a while. I absolutely LOVE them!!!They are the cutest pair of shoes ever, and they are super comfy. Although, I fit in a child’s size so a lot of people at school think that they’re adorable because of how small I had to get them.

Guess what?!? Tomorrow is Pounders Birthday! My puppy is turning 70 years old (10 years old in human years). Oh gosh, I just love him sooooooooooo much! So tomorrow, I am going to spoil him 10 times more than I do to make his birthday the best. I was thinking of making him a dog cake, but he is allergic to everything so I wouldn’t be able to. Although, I will try to get him a new chew toy for him to play with and maybe a brand new collar so he can look dapper. 🙂

 Yield: 16 Delicious Brownies

1/2 cup of butter
2 1/2 oz. of unsweetened chocolate, chopped
2 eggs
1 egg yolk
1/2 cup of light brown sugar
1/2 cup of granulated sugar
1 teaspoon of baking powder
3/4 cup of all-purpose flour
2 teaspoons of vanilla extract
1/2 teaspoon of vanilla bean paste
1/2 cup of milk chocolate chips

Chocolate Glaze:
1 cup of powdered sugar
1/4 cup of milk chocolate chips
1/4 cup of water
2 tablespoons of cocoa powder

1. Pre-heat the oven to 350 degrees

2. In a medium sized bowl, place the chopped chocolate and butter in the microwave and heat until the butter is melted. Whisk the butter and chocolate until the chocolate is also melted.

2. Using a stand mixer or hand mixer (use a whisk attachment), whisk the butter-chocolate mixtures with the sugars.

3. Slowly add in the eggs. Now whisk until the mixture turns light brown and is fluffy.

4. Add in the flour, baking powder, vanilla extract, and vanilla bean paste. Whisk until the batter is light.

5. Finally, fold in the chocolate chips.

6. Butter a 9×2 cake pan. (Use parchment paper for the bottom and sides of the cake pan, the butter the sides and bottom of the pan. This way, the brownies wont stick)

7. Carefully pour the brownie batter into the cake pan.

8. Bake the Brownie batter for 30 minutes in the pre heated oven.

9. Let the brownies cool for 30 minuets.

10. Turn the cake pan upside down on a piece of parchment paper so that the brownie comes out of the pan. Then carefully place the brownie onto a plate.

11. Cut the brownie so that you make 16 little brownies.

Chocolate glaze:

1. Heat the water.

2. In a large bowl, mix together the water, chocolate chips, powdered sugar and cocoa powder.

3. Whisk the mixture until it is at a thick and smooth consistency.

4. Pour the glaze onto the brownies.

5. Let the brownies sit in the glaze for 10-15 minutes so that the glaze is soaked up well.

12. ENJOY the brownies!!!!!!!!!!!!! 🙂
