♡ Oatmeal Chocolate Chip Cookies ♡

             Happy Sunday my lovelies! Well, as I promised, I did get to make something new. I wanted to make something simple, get comforting when it starts to get cold. And for the past few weeks, I have been eating Oatmeal for breakfast.. So, it clicked to me yesterday to try out Oatmeal Cookies! And since I didn’t have any raisins, I opted for Milk Chocolate Chips. And oh man, these cookies are so good! They are nice and chewy in the middle but crispy around the edges. Plus, the Milk Chocolate Chips compliment the sweet oatmeal flavor which combines to make an amazing cookie. Although, instead of using old oats, I used “Quaker Instant Avena, Vanilla flavored” which is the best oatmeal in the world. To put this in a simple manner; these are delicious cookies and you have to try them.

             Well, this week was my first week of high school. It was…..interesting. But all in all, I cant wait for another vacation. I’m already counting the days down until my winter break starts. School is just school, no matter what grade I’m in. And I already have homework! I mean seriously? I have to sit and listen to teachers all day while I’m half awake, and then come home from school to do more school work? I really think a petition should be put in place so we wont have to get homework during the first month of school. Or that our homework was reading John Green books because he is a literature genius. Never mind me and my ridiculous thoughts, lets get to the cookie making process!

Yield: 12 delicious Cookies

1/2 cup of butter
1/2 cup of granulated sugar
1/4 cup of light brown sugar
1 egg
3/4 cup of flour
1/2 teaspoon of baking soda
1 1/2 cup of Quaker instant avena, vanilla flavored(or just old oats)
1 teaspoon of vanilla extract
1/2 teaspoon of vanilla bean paste
1/2 cup of chocolate chips

1. Pre-heat the oven to 350 degrees.

2. Using a stand mixer or hand mixer, cream together the butter and sugars.

3. Add in the egg.

4. In a medium bowl, mix together the flour and baking soda. Slowly Pour it into the wet ingredients and mix well.

5. Add in the instant oats, vanilla extract, and vanilla bean paste.

6. Finally, add the chocolate chips and mix until the dough is sticky and well mixed.

 7. Line 2 baking sheets with parchment paper.

8. Roll each cookie (2 tablespoons of dough for one cookie) and flatten them slightly before you place them on the baking sheets. Sprinkle cinnamon on each of the cookies.

                                                      9. Bake the cookies for 10-12 minutes.

10. Once the cookies are finished baking, let them cool on a cooling rack for 10 minutes.
