Hello my lovelies! So I have decided that this Spring Break has left me to become lazy! I have only baked once this week and I didn’t even frost the cookies! Oh well, at leat these cookies came out amazing. They dont’t even need frosting really, because these cookies are delicious all by themselves. But I do promise that I will be baking alot soon..it’s just that I have been taking advantage of this well deserved break! Anyways, this recipe was inspired by Borwn Eyed Baker, but I did change a lot of things to make this recipe my own.

1. I went to Busch Gardens this week and it was so much fun! There is this rollercoater called the Griffin that looks super scary! And with me being super scared of heights, I never even wanted to think about riding it. But I learned a lesson that when you bring your friends and you are with your brother, you have no choice. My brothers friend literaly picked me up and took me in line! Then my friends held on to me and wouldn’t let me go. SO I ended up riding the Griffin. With my eyes tightly closed, I somehow survived the first drop and I actually enjoyed the rollercoaster. So I can now say with pride that I rode the Griffin!

Yield: 18-20 cookies
1/2 cup of butter
3/4 cup of light brown sugar
1 1/2 cups of granulated sugar
2 eggs
1/2 cup of cocoa powder
2 cups of all-purpose flour
1 tablespoon of vanilla extract
1. Using a stand ixer or hand mixer, beat the butter and sugars untl they are at a creamy consistency (abut 5-10 minutes)

2. Slowly add in the eggs and the dry ingredients.

3. Finally, add in the vanilla extract and keep mixing until the cookie dough is soft and sticky.

4. Place the dough in plastic wrap and refrigerate the dough for 40-60 minutes.
5. Pre-heat the oven to 325 degrees. and line 2 large baking sheets with parchment paper.

6. Place the dough on a lightly floured surface.

7. Roll the dough out, and using a cookie cutter of your choice, cut out the dough.

8. Place the cookies on the large baking sheets.

9. Bake the cookies for 13-15 minutes.

10. When the cookies have finished baking, let them cool on a cooling rack for 10-15 minutes.

11. Frost the cookies to your liking, and ENJOY the cookies!!!!!!!!!!
