Well, its been sooo cold outside! So, I was looking for recipes and I found one from Brown Eyed Baker , but I did change a few things. These cookies are soo sweet and perfect with ice cream. With a subtle taste of cinnamon, they leave you wanting more. They are also VERY easy to make and they only take 12 minutes in the oven!

Yield- 12 cookies
1 1/3 cups of all-purpose flour
3 teaspoons of vanilla extract
1/2 teaspoon of ground cinnamon
1 large egg
1/4 cup of unsalted butter, softened
1 teaspoon of cream of tartar
1/2 teaspoon of baking powder
1/2 teaspoon of baking soda
3/4 cups of granulated sugar

Cinnamon-Sugar Coating-

3 tablespoons of granulated sugar
1 tablespoon of ground cinnamon

1. In a large bowl, using an electric mixer, mix together the butter and sugar. Then add in the egg and mix well.

2. Add in the dry ingredients and vanilla extract into the bowl. Mix together untill the cookie dough looks like the picture above.

3. Pre-heat the oven to 350 degrees and place the dough in freezer for 10-15 minutes. (Put plastic wrap on the top of the bowl)

4. Cinnamon-Sugar Coating- In a small bowl, whisk together the cinnamon and sugar untill it is well combined.

5. Place parchment paper on a large cookie sheet.

6. Scoop the dough by 1 tablespoon balls. Roll each ball into the Cinnamon-Sugar Coating and make sure each ball is well coated.

7. Place each ball evenly onto the parchment paper and bake the cookies for 12 minutes.

8. Once the cookies have finished baking, place them on a cooling rack and let them cool for 10-15 minutes. After that, ENJOY!!!

             On the other side, after I baked these cookies, I took my dog for a walk. Theres just something about the cold and autumn that gives me ideas for baking. So, I took my camera with me to take pictures but my dog wasn’t the best model. He kept moving but I did manage to get a few good shots. Pounder is such a pretty boy, isnt he? But the best reward is when I got home and I got to eat the Snickerdoodles. They were soo delish!
