Pumpkin Cookies with Spiced Glaze

              For my Big Pumpkin Adventure I decided to make (drumroll) “Pumpkin Cookies with Spiced Glaze”! These are my own recipe and they are sooo delicious is almost crazy! So, this week has been a little weird, its so cold outside and its only fall. On Monday, my power went out for like 5 minutes because of hurricane sandy and it was like the scariest thing ever. But, I appreciate the cold weather that hurricane sandy left. For me, thats like perfect weather for baking and taking long walks with my dog. But I hope that all of the people who also went through Hurricane Sandy are O.K.!My mom has been taking my baked goods to her school and all the teachers are raving over me! I hope to get other peoples’ attention, I would love to have my own bakery one day! Well, heres my recipe:

Yield- 13 medium-large sized cookies

2 cups of all-purpose flour
1 1/2 cups of pumpkin puree
2 1/2 teaspoons of pumpkin pie spice
2 teaspoons of ground cinnamon
1/2 teaspoon of ground nutmeg
1/4 teaspoon of ground ginger
1/4 cup of butter
1/4 teaspoon of salt
1 cup of light brown sugar
1/4 cup of dark brown sugar
1/4 cup of granulated sugar
1 teaspoon of baking soda
1 teaspoon of baking powder
1 large egg
1 teaspoon of pure vanilla extract

Spiced Glaze-
2 cups of powdered sugar
3 tablespoons of milk(I used 1% milk)
1/2 teaspoon of ground nutmeg
1 teaspoon of ground cinnamon
1/2 teaspoon of pumpkin pie spice
1/4 teaspoon of ground ginger
1-2 teaspoons of vanilla extract

1. In a large bowl, using an electric mixer, mix together the butter and sugars.

2. Next add in the pumpkin puree and egg. Mix together well.

3. Finally, add in the dry ingredients and vanilla extract. Mix the cookie dough untill it is well combined and looks like the picture above.

4. Pre-heat the oven to 375 degrees.

5. Place pachment paper onto large cookie sheets. Scoop a whopping 1/4 cup of dough (yes, for EACH cookie) onto the parchment paper.

6. Bake the cookies for 10-13 minutes in the oven.

7. Place a piece of parchemt paper on the bottom of a cooling rack.

8.  Once the cookies have finished baking, place them on a cooling rack. Let them cool for 10-15 minutes.

9. To Make the Spiced Glaze-  In a medium bowl, place all of the ingreedients together (sugar, spices, vanilla extract, and milk).
 10. Using an electric mixer, mix the ingredients untill the glaze is at a thick, and creamy consistency.

11. Place the glaze evenly on top of each cookie and let them set for 5-10 minutes.

12. If you want, you can keep your cookies in the refigerator (thats what I do) and ENJOY them!!
