Oreo Cupcakes with Mint Buttercream Frosting

               Well, I love oreos. And yesterday, a twitter follower gave me the idea to bake an oreo cupcake. So, I searched all over the internet and found a recipe. This cupcake is soo good and leaves your mouth feeling refreshed. But I did learn a few things when I made them because at first, I had difficulties. But by the end, I was almost an expert! They are soo cute too and the frosting sweetens the taste of the chocolate. But the chocolate cupcake itself is very moist and has a defined chocolatey taste. And trust me, they are as good as I am describing them. I adapted this recipe from Mini Baker, but I changed a few things and I didnt do the ganache on top. I also put half of an oreo on top of the cupcakes,and I placed oreo crumbs on top of them. These cupcakes are easy to bake once you get used to the process of making them. I hope you love them!! :)))

Yield-17-19 cupcakes

2 cups of flour
2 1/3 cups of white sugar
2 teaspoons of baking soda
1 teaspoon of baking powder
3/4 cup of unsweetened cocoa powder
1/2 teaspoon of salt
1 cup of vegetable oil
1 cup of hot water
1 egg
3-4 teaspoons of vanilla extract

Mint Buttercream Frosting-
5 cups of confectioners’ sugar
1/2 cup of softened butter
3-6 teaspoons of mint extract(If you want it really minty, then put 6 teaspoons)
4-5 tablespoons of heavy cream

1. In a large bowl, using an electric mixer, mix together all of the ingredients
untill the batter is in the middle of thick and thin.

2.Next, Pre-Heat the oven to 350 degrees and line the cupcake tin.( My cupcake tin only holds 12
cupcakes so I had to use it twice)

3. Get 8-9 oreos and twist them in half. Put them on the bottom of the cupcake wrapper with the cream side facing up.

4. Pour the batter into the liners. Fill them ONLY 3/4 full. DO NOT over-fill them or else the cupcakes will sink.

5. Bake the cupcakes for 20-22 minutes in the oven. Make sure that you can stick a toothpick in them and it comes out clean before you take the cupcakes out of the oven. Once they are done baking, let them cool in the cupcake tins for 5-10 minutes  and then carefullt take them out of the cupcake tin and let them cool on the cooling rack for 20-30 minutes.

6. Mint Buttercream Frosting- In a large/ medium bowl ( I recommend large), using an electric mixer, mix together the confectioners’ sugar, butter, mint extract, and heavy cream. Mix it untill the frosting is thick and creamy. Once the cupcakes have cooled, spread/pipe the frosting on them and enjoy!!!
