Jumbo White Chocolate Macadamia Cookies

       So, for about 2 weeks my brother was bothering me about making his favorite cookie; White Chocolate Macadamia. Yesterday, I decided that I was going to make them for him. When he tried the cookie, he said they tasted “Good, like a subway cookie but yours is fatter”! For him, thats a really good compliment! My friend tried it and said they were “Amazing! And taste better than Subways”. Well the controversy is still standing whether they taste like subways cookies, or are better than subways cookies. Anyways, you should try them and tell me what you think! I like making my cookies jumbo as you can notice from my other recipes. Theres just something appealing to me about eating a cookie bigger than my hand! I’m planning on making these for my dad once he gets off deployment because White Chocolate Macadamia are his favorite! Mt recipe was inspired by Brown Eyed Baker , but I did change a few things. Enjoy!!!

Yield- 9 Jumbo cookies
2 cups of all-purpose flour
1 large egg
1/4 cup of butter
3/4 cup of light brown sugar
1/4 cup of dark brown sugar
4-5 teaspoons of vanilla extract
1/4 cup of white sugar
1/2 teaspoon of baking soda
1/2 teaspoon of baking powder
1/4 teaspoon of salt
1/2 cup of white chocolate chips
1/4 cup of macadamia nuts

1. In a large bowl, using an electric mixer, mix together the sugars and butter. Next add in the egg and mix the mixture together well. Add in the dry ingredients and the vanilla extract. Lastly, mix in the white chocolate chips and macadamia nuts. Mix the dough untill it sticks together like the picture above.

                    

                                                                                                                                                                                2. Pre- heat the oven to 325 degrees. roll the cookie dough into 1/4 cup balls and place
them on a sheet of parchment paper. Make sure that the balls are an equal distance apart.

3. Place the cookie sheets in the oven and bake the cookies for 15-18 minutes.

4. Once the cookies are done baking, place them on a cooling rack for 5-10 minutes. After they have cooled, dig in and enjoy!! :))))
