Jumbo Sugar Cookies

So today, I really wanted to make cookies. It is Friday and I finally have the weekend to myself! I decided to make simple cookies so I made “Jumbo Sugar Cookies”. They came out so super good and really chewy. My recipe was inspired by Brown Eyed Baker but I did change a few things to make it to my liking. I am soo glad I did! I love these cookies, they are crispy on the bottom but chewy in the inside. They are also super easy for when you dont want to spend too much time on cookies. You will enjoy these as much as I did!!

Yield- 10 Jumbo Cookies

2 cups of all-purpose flour
1/3 cup of butter
1 1/4 cup of granulated sugar
1 large egg
3 teaspoons of vanilla extract
1/2 teaspoon of baking powder
1/2 teaspoon of baking soda
1/8 teaspoon of salt

1/2 cup of sugar ( for dipping the cookie dough in)

1. In a large bowl, cream together the butter and sugar. Then, add the egg and mix it together well. Add in the flour, salt, baking soda, and baking powder. Finally, add in the vanilla extract and mix the cookie dough until it is sticking together.

2. Using your hands, roll the dough into a ball, wrap it in plastic wrap, and place it in the refrigerator for 20-30 minutes.

3. Preheat the oven to 375 degrees and take out the cookie dough. Roll the dough into 1/4 cup balls and dip the top of them in 1/2 cup of white sugar.
4. Place parchment paper on the cookie sheets and bake the cookies for 10-11 minutes. At 9 minutes, sprinkle some more white sugar on the top of each cookie. They should come out looking fluffy like the picture above.
5. Place the cookies on a cooling rack and let them cool for at least 3-5 minutes. ( I know its hard not to eat them the second they come out, but try to be patient!)

6. After the cookies have cooled, enjoy them! They are super cute and pretty big! I hope you try this recipe out and like it!! :)))
